How do you maintain that standard across two outlets, three outlets, five outlets, without it depending entirely on the same two people being in the room every day?

The answer is management efficiency, and it is the least glamorous, least talked-about part of building a food brand that lasts. Defined roles, clear processes, documented standards, and systems that function the same way regardless of who is running the shift. 

Not because we distrust the team, but because consistency at scale is a structural problem, not a people problem. You cannot hire your way out of it. You have to build your way out of it.

That thinking shaped how Platesman was set up operationally from day one, and it is the same thinking that is guiding the expansion now.

Why Speed Is at the Core of Everything We Do

Speed in a restaurant context is often misread as rushing getting food out faster by cutting corners somewhere. That is not what we mean, and it is not what we have built.

Speed, as an operational principle, means reducing the time between a decision and its consequence. An order placed should reach the kitchen with zero ambiguity. A feedback point raised by a customer should reach the team the same day, not in a weekly review. 

A catering request should move from enquiry to confirmed booking without three back-and-forth conversations. Inventory running low should trigger a reorder before it becomes a menu problem, not after.

Every point of friction in a restaurant’s operations costs something: time, money, quality, or customer trust. Speed, built into the system properly, removes those friction points rather than masking them. 

For a brand planning to operate across multiple outlets simultaneously, that is not a nice-to-have. It is the difference between consistent and chaotic.

The Food Approach Never Changes No Matter How Fast We Move

This needs saying clearly, because there is a version of the “we’re getting more efficient” story where the food eventually gets worse, and the brand rationalises it as a necessary trade-off for growth. That is not Platesman.

Every operational system we build, however fast, however tech-enabled, exists to protect the food, not to replace the thinking that goes into it. Fresh ingredients are still the standard. The Croiss N Chocolate, available exclusively at the Aundh outlet through our collaboration with Honeycomb, is a good example of how this works in practice. It is the result of a real creative partnership, made well, and available only where it can be made right. 

That kind of intentional restraint is as much a part of the brand DNA as anything on the main menu.

Expanding With Deshpee: What the Parent Company Actually Does

Platesman sits inside the Deshpee Group, and that relationship matters operationally in ways that go well beyond shared ownership. For most independent food brands, every function marketing, technology, content, brand building, data either gets handled slowly in-house or outsourced piecemeal to vendors who do not know the business well enough to do it right.

Platesman does not have that problem. Socinova & Trigacy, Deshpee’s digital marketing consultancy, handles brand building, SEO, social media content, and digital advertising across the outlets.

Not a wall of screens in the kitchen, but an operational layer where every tool chosen has a clear job to do, and where the data it generates is genuinely used to make better decisions rather than sitting in an untouched dashboard.

The numbers from the wider industry point to where this is heading. Automated systems reduce ordering errors by 25%. Eighty-two percent of restaurant executives are increasing investment in AI with a direct focus on operational efficiency. 

Eighty-one percent of restaurant operators plan to expand AI usage in reservations and order management over the next 12 months. These are not distant trends for large chains. They are the floor-level minimum that any food brand planning to scale needs to be building toward now.

Where AI Fits Into the Platesman Model

AI is being integrated into Platesman’s operations in specific, practical ways, not as a talking point but as a functional layer on top of the systems already in place.

Demand forecasting is one direct application. Using order pattern data from Petpooja across outlets, AI-assisted analysis helps anticipate what will sell on a given day based on historical patterns, day of the week, and local context. 

That directly reduces food wastage, one of the largest controllable cost variables in any restaurant operation, and ensures the kitchen is prepped correctly without over-ordering.

Content and communication workflows are another layer. Within the Deshpee ecosystem, AI tools support the production of Instagram content, caption writing, and campaign planning for Platesman’s social channels. 

The output is reviewed and edited by the team; the AI accelerates production; it does not replace the judgement behind it.

The Platesman Regulars Club, once live, will use customer preference and order history data to personalise what gets sent through WhatsApp, which dishes to highlight for a returning customer who always orders a specific type of meal, or when to surface a catering offer to a customer whose previous order patterns suggest corporate use. 

That kind of personalisation, at scale, is only practical with AI doing the pattern recognition behind it.

The principle running through all of it is the same one that runs through the food: technology in service of something real, not technology for its own sake.

What This Adds Up To

Platesman is two outlets into a multi-city ambition. The food philosophy that started in Bavdhan is intact and non-negotiable. 

The systems being built around it operational speed, Deshpee’s in-house brand infrastructure, Petpooja-powered data, and AI layered on top are what make the next chapter viable rather than just aspirational.

The restaurant brands that scale well are never the ones that had the best food at outlet one. They are the ones that built the right infrastructure around that food before the growth made the absence of it painful.
